Easy High Protein Energy Balls

Chewy, chocolatey, and packed with protein – the perfect snack for busy days or post-workout fuel!

I don’t know about you, but I’m sick of opening a tasty looking recipe and having to scroll through a bunch of bulls*** to get to the actual recipe and ingredients, so here I promise to keep it simple.

The truth is, we are all probably eating less protein than our bodies need. I’m here to provide easy switches to delicious recipes so we can incorporate more protein into our diets without compromising our favorite foods or their taste.

I like to make these protein balls (they are so fast and easy) when I do my weekly meal prep to have them on hand as a quick snack. I usually eat 2-3 as a serving.

Ingredients:

  • 1 cup rolled oats
  • ½ cup natural peanut butter (or any nut butter you prefer)
  • ¼ cup milk (any kind, adjust amount as needed for consistency)
  • ¼ cup honey or maple syrup
  • ¼ cup protein flavored protein powder
  • ½ serving unflavored collagen protein powder
  • 2 tbsp chia seeds or flaxseed
  • 2 tbsps mini chocolate chips (optional) or cinnamon or cocoa powder, etc
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Combine wet ingredients – in a medium bowl, combine peanut butter, milk, honey, and vanilla extract. Stir until smooth.
  2. Add dry ingredients – mix in oats, protein powder, collagen powder, chia/flax seeds, optional add-ins, and salt.
  3. Adjust texture! If the mixture is too sticky, add a tiny bit more oats. If it is too dry, add small amounts of milk.
  4. Line a tray with parchment paper.
  5. Form balls – I like to use a spoon then roll the mixture in my hands to make them roughly golf ball sized. Place on a parchment paper tray, leaving a bit of room between each ball.
  6. Chill – place in the fridge for at least 30 minutes to firm up.
  7. Store for up to 1 week.
